MEE KU

Ingredient 

  • 300 g superfine cake flour
  • 80 g sugar
  • 1 tbsp shortening
  • 1 1/4 tsp  instant Yeast
  • 150-170 ml water
Method

  • Mix all ingredients in a big bowl except water. 
  • Combine till well mixed and add water slowly slowly bit by bit 
  • Knead until the dough smooth does not stick to your hand. 
  • Lastly add in shortening continue to knead till smooth and set aside, allow to proof until doubles. 
  • This normally takes around 30-40 minutes.
  • After doubles lightly press it and if it bounce back after pressing ..then it's ready.
  • Divide the dough @ 100 g each and  make it into the round shape.
  • Allow to proof for 20-30 minutes or till double before steaming.
  • Prepare the steamer and steam for 15 to 20 minutes.
  • Apply the pink food coloring on it or design the pattern using pink colour according to own preference.
  • Place the steamer tray on the steamer and allow it to steam for 20-25 minutes with high heat. Please do not open the steamer cover till at least 20 minutes. this will reduce or minimize shrinkage.
  • Open the steamer cover slightly to release the heat for few minutes.
  • Let it stand for another few minutes before removing the cover. With this, the mee ku  will not shrink after cooling down
