STIR FRY CLAMS WITH FERMENTED SALTED BEAN
A - Ingredient
- 800 g clams
- 2 tsp salt
- sufficient water to soak clam
B - Ingredient
- 5 crush garlic
- 6 -8 slices ginger
- 1 tbsp fermented salted soy bean
- 4 stalks of spring onion (cut into about 3 cm long)
C- Ingredient - seasoning
- 1 tsp premium oyster sauce
- 2 tbsp light soy sauce
- 1 tsp chicken granules
- 1 tablespoon sugar
- 300 ml water
D - Others
- 3-tbsp cooking oil
- 150 ml water
- 2 tbsp hua tiao wine
- 1 tbsp sesame oil
- Tapioca starch solution ( 1 tbsp tapioca flour + 6 tbsp water )
Direction - Cleaning Clam
- Wash and clean clams remove the outer shells dirt and mud.
- Add 1 tbsp salt in a bowl of water, mixed well, add in clams. Set aside for 20 minutes.
- Open and break into 2 removing one side of the shell
- Wash mud dirt away, rinsing under slow running tap water and rinse a few time until clean. Set aside to drain excess water away.
Direction - Frying Clams
- Heat up a wok add in 3 tbsp cooking oil.
- Add in ginger, garlic and fermentated salted soy bean saute until lightly brown.
- Add in spring onions. Keep frying.
Add in clams, stir fry til fragrant and add in seasoning. Stir till well combine. simmer for a few second.
Add 2 dashes of sesame oil and 2 tbsp of Shaoxing wine.Taste salty and sweetness according to own preference. Add is tapioca starch solution, combine til reaching prefer thickening gravy consistency.
