BRAISED PORK BELLY WITH MUSHROOM IN OYSTER SAUCE

Ingredient 
  • 500 g Pork Belly (cut into estimated small chunks around  3/4 in)
  • In a pot of saucepan of boiling water. I blanched my pork belly for 5-8 minutes to remove the blood impurities and drain away impurities using tap water.
  • (marinate pork belly with seasoning A for 2-4  hours or overnight 
  • 8-10 mushroom (pre soak)
  • 400 ml plain water
  • 1/4 ring round gula melaka 
  • 2 bay leaves 
  • 2 tsp cornstarch solution ( 2 tsp cornstarch + 4 tsp plain water)
Ingredient to saute
  • 1 bulb smash garlic
  • 1 in smash ginger
  • 2 cinnamon Stick 
  • 2 -3 star Anise
Seasoning A
  • 3 tbsp Oyster sauce
  • 2 tbsp dark soy sauce(more or less depends on how dark your dark soya sauce is) 
  • 1 tsp chicken granules
  • 1/2 tsp salt (as per preference)
Direction 
  • Heat up a pressure cooker add 2 tbsp cooking add in Ingredient to saute till lightly fragrant.
  • Add in marinated pork belly, mushroom, bay leaves and gula melaka keep on frying till well combine and fragrant
  • Add in 400 ml plain water combine well and close pressure cooker lid to cook for 15-20 minutes till cooked
  • Taste sweet and salty as per own preference 
  • Lastly thicken gravy with added cornstarch solution till own preference and well combine.
  • Dish up to serve
