SWEET POTATO KEROPOK











Ingredient Ingredient 

200 g  Mash steam Sweet Potato
200 g Tapioca starch
1⁄2 teaspoon salt
1 1⁄2 teaspoon sugar
1⁄4 teaspoon pepper
1 teaspoon Maggi chicken granules
1 teaspoon oil

100 g of water (plus or minus)
Mixed all ingredient A and knead till well combine until become a smooth dough 

Roll into a log shape or you may also roll to a thicker shape as per your own preference. Steaming time depend on the thickness of our dough. Well mine too estimated 40 minutes.

Sprinkle some tapioca flour when need should it  be a little sticky or sprinkle some drop of water should it be dry. Every brand of flour absorption to water react differently. 

Wrap the log dough using a non stick parchment paper and store in the fridge for one hour or more.This is allow the dough to firmed up and sustain it's shape.


In a hot boiling steam place the log and steam it for..mine takes up 40 minutes. You may also use the boiling method but I prefer the steaming method as I will retained the taste by using steaming method. Well this is my personal opinion..

After steaming I roll the dough in a new parchment paper and kept in the fridge for 24 hours. We are doing this to prepare the dough to be firm  and that's when we are able to hold and sliced the ready steamed dough.

Tara......Here is how it looks like.. Sliced as  thinly as possible using a super sharp knife.

Tara.... If you want your keropok to be bigger then roll a bigger  and wider roll.

The thinner you sliced them the crispier it will be.. Nevertheless what you may see here looks slightly as if it looks thick ..it's ok ..because as you dried them in the hot sun it will dried up the width of this sliced will looks thinner.

If you do notice .. the center of the dough is slightly whitish ..very minimal..this means it is not evenly steamed..hmmm.. nevertheless. I was lucky as I dried them up in the sun ..it began to fully dried up so steamed longer according to needed.  Important tips..if the dough is not fully steamed..this portion may cause  it to be not crispy when frying keropok so take note.
Ready to be dried in the hot hot sun .. It took me 2 days.. Ensure the sun is super hot..otherwise please continue to dry them . It should look slightly  transparent as it dries up.
