SAMBAL KAPITAN CHICKEN




















Sambal Chicken Kapitan

1/2 Chicken     (cut into preference size)
3 boil potatoes (cut into preference size)
2 boil potatoes (mash up )
3 lemon grass (smash)
10 g sesame seed. (Optional)

5 tbsp cooking oil
400 ml water

Ingredient A ( to be blend)

10 shallots
4 garlic cloves
3 stalk of lemon grass (cut only the top portion )
1 tsp belacan powder
2-3 tbsp chilli paste

Seasoning:
1 tbsp chicken granules
1 tbsp oyster sauce
3 tsp sugar
1/2 tsp salt

Method
  • Heat oil in a wok,  saute blended  ingredient A, 
  • then add in 3 stalk of lemongrass stir till fragrant.
  • Add in chicken  and add in seasoning, stir fried till fragrant then add in water
  • Add boil potatoes , continue to simmer .
  • When you notice the potatoes are soft using a fork smash roughly 4 potatoes until dissolved.
  • Continue to simmer until gravy become slightly thicken.
  • Taste according to preference on salty and sweetness.
  • Dish out and serve hot
