BLACK VINEGAR PORK TROTTER
Ingredient
1/2 pork trotter
300 g pork lean
2 tray ice cube
90 g Old ginger (mash up)
8 cloves garlic (mash up)
15 pieces dried chilies
200 ml black vinegar
1000 ml water
50 g gula melaka
Method
Heat up 2 tbsp of oil.
Fried old ginger, garlic and dried chilies fry until fragrant.
Add trotter and fry well until fragrant
Add in black vinegar, water and palm sugar and bring to a boil.
Change to a pressure cooker until trotter is tender.
This usually takes 25 -30 mins.
Taste salty, sweet and sour according to own preference.
Ready to serve hot .

In a pot of boiling water add in pork trotter to boil to remove blood impurities .Drain pork in running tap water . |
Soak pork trotter in a pot of cold water (from 2 tray of ice cube + 1/2 pot of plain water) Soak until totally cold. |
Set aside in a bowl |
