RED BEAN PASTE














Red Bean Paste
Ingredient 
300 g Red Bean
plain water 2 inches above red beans to pressure cook
160 g Sugar
160 g cooking oil
10 g glutinous rice ( Dissolve with 3 tbsp plain water)

Note:
 I got a 500 g red bean after I pressure cook my 300 g

Direction 
Soak red bean for 4 hours in water
Wash and drain then pour red bean into a pressure cooker add in plain water 2 inches above just to cover the beans and pressure cook them for 20 minutes.
Remove and set aside

Use a blender to puree /blend warm red bean till smooth.

In a medium heat non stick pan, add sugar and  red bean, continue stirring throughly.
You will notice the sugar melts keep stiring evenly.
Keep on stirring and you will notice the red bean is slowly thickening add in oil little by little.
Add glutinous rice solution keep stirring till red bean becomes a dough paste.
And your bean paste is ready.

Home make is about making your own Red Bean Paste is that you can control the ingredients. Most home cooks will use only red beans, desired amount of sugar, and sometimes a little oil. The color is that of the red beans and opaque. The texture is usually coarser unless a food mill is used to separate the skin from the flesh during mashing. It has a fresh red bean flavor.

Store bought pastes often have additional ingredients such as food coloring, oil,  and flour to bulk it up. The color is very dark, almost black. Texture wise, it is very smooth and glossy. Most store bought pastes have good flavor but they are usually very sweet. They are a convenient alternative. Well the choice is ours to choose.
