SWEET SOUR AND SPICY FLOWER CRAB WITH PINEAPPLE












   Important note : Fried well till real fragrant before adding water






Sweet and Sour Flower Crab with Pineapple

Ingredient
4 big large flower crab
6 fresh chillies + 2 inches ginger + 6 garlic (blended )
2 eggs - lighly beaten
1/4 piece gula melaka
300ml water

3 tsp tapioca flour solution (3 tsp tapioca flour + 4 tsp water to dissolve

Ingredient  (Seasoning)

5 tbsp tomato sauce
5 tbsp chilli sauce
2 tbsp fish sauce
2 tbsp Oyster sauce
1/2 teaspoon of tau cheo
1/2 cup water

salt and sugar to taste (as per own preference)

Decor:
Coriander or/and scallion leafs
1 red chilly

Note: If  you want it spicier..then add more chilli
Double up the sauce if you need more gravy. Adjust according to own preference taste.

Method.

Heat 4 tbsp  oil in a wok over medium high heat.
Add in blend chillies into the wok, stir fry afew minutes until fragant.
Add in crabs and pineapple stir, ensure gets well coated with sauce until almost fragrant and dry.
Add in gula melaka
Add in 300ml water..slow add bit by bit till finished.
Allow it to simmer and lower the heat ..closed the wok with a wok lid allow to simmer until cooked.
Add in tapioca starch solution stir till well blend  ..stir add in 2 beaten eggs stir.
Dish to a platter and ready to serve
