STEAMED RICE PUDDING CAKE / CHWEE KUIH













































 Ingredient - Yield only 3 pieces

40 g  Rice flour
10 g   Wheat starch 

1 tsp sugar
a pinch of  Salt
a drop or two cooking oil 


60 ml plain water
120 ml  boiling hot water

Preheat Steamer ready for steaming 
Method

  • In a mixing bowl mix rice and wheat starch flour, sugar, salt with  60 ml  plain water till well combine,  add in  2 drop oil mixed until well combine.
  • Bring  120 ml water to a full boil ...boiling hot. Slowly pour the boiling hot water into flour mixture evenly yet quickly stiring continuously to get a smooth and lump free texture. 
  • Brush a little oil onto the mould. Pre steamed for 3-4 minutes 
  • Pour batter into mould about 3/4 full. 
  • Steam for about 15 - 20 minutes. Unmould and add topping and serve.

Minced meat topping recipe
Ingredient 
100 g mince pork
3 tbsp preserved radish (salty or sweet optional own choice)
2 small  chop onion 
2 tsp  Light Soy Sauce
1/2 tsp  Dark Soy Sauce
2 tbsp   Sugar
1/2 tsp  Salt
1 tbsp   Pepper

Note:

  • Sweet and salty to be adjusted as per own preference taste
  • Rinse radish under running tap water briefly.  Use your hand to squeeze out the excess water from the radish.
Method
  • Heat up a 3 tbsp oil in a frying wok, add in chop shallots fry till lightly brown add in mince meat stir fry till fragrant. 
  • Add in preserved radish stir fry. add seasoning stirring occasionally, cook over low heat for about 20 minutes till cook and fragrant.
  • Dish up.
