MIXED FRUIT BUTTER CAKES








Mixed Fruit  Butter Cake 

Ingredients
230g Butter
200g Self rising flour
70g castor sugar
1-2 tsp  vanilla paste flavour
60 ml milk
6 egg yolks

Meringue
6 egg whites
80g caster sugar
1 tsp baking powder

Mixed fruits
50 g Green cherry
50 g Red  cherry
50 g chopped walnuts
100g Dried red cranberries

50 g wheat flour
1/2 tsp baking powder

Combine till well blend..set aside for 2 hours
You could opt to choose and use other fruit as per own preference

Method
Preheat oven 150C.  Line an 7 inch pan with parchment paper and prep all your ingredients.
Separate your egg yoke and white in 2 separate mixing bowls.

Cream butter and sugar until it becomes white and fluffy .
Add in vanilla flavoring.
Add in egg yolks one by one until everything is smooth and well combined.
Add in milk, add in flour gradually into the butter batter mixed combine until smooth and well combine set aside.

Preparing meringue 

In another clean mixing bowl, whisk egg whites until soft peak.
Add in sugar gradually, continue whisking until stiff peak
Add 1/3 part of meringue to batter, mix gently using spatula
finally add in mixed fruit mix gently using spatula

Pour batter into an 7" square pan  shape lined cake pan
Swirling the batter using a chop stick will help reduce the bubbles
then drop the baking pan on table for 3-4 times to burst large air bubbles.

Bake at 150°C temp for 50 minutes( upper and lower) then increase to 160°
and continue baking for 15-20 minutes, or until fully baked.

Reminder: 
The heat for different oven may vary depending on your oven. the suggested time is only for reference, adjust the baking time base on your oven if necessary.
The cake is ready when the toothpic stick inserted in the center of the cake comes out clean.
Let the cake cools in the baking pan for 10 minutes before unmoulding.
After unmoulding, let the cake cools on wire rack for 30-35 minutes before serving.


60 g Walnuts,  100 g Dried cranberries, 50 g Red and 50 g Green cherry

                Add in 50 g Wheat plain flour + 1/2 tsp baking powder (optional)


                               Combine till well blend..set aside for 4 hours
