MIXED FRUIT CAKE - ORANGE FLAVOR

 








Mixed Fruit Cake -Orange flavor 

Ingredient A ( Mixed and sieve)
250 gm Cake flour
1 tsp Baking powder
2 tsp milk powder ( I use dutch lady full cream milk )

Ingredient B
180 gm Buttercup
80 gm Castor Sugar
4 Egg yoke
1 tsp Orange  flavor/Essen Vanilla

Ingredient C
1 tsp Orange flavor/Essen Vanilla
180 gm Mixed Fruit (Coat with a little cake flour=soft flour)

Meringue ingredients
4 eggs white
80 gm Castor Sugar

Method
1. Combine butter, sugar, and in a mixing bowl, then beat over medium speed until light and fluffy.
2 Add in egg yolks gradually, beat until fully combined before adding another.
3 Add in ingredient A batch by batch slowly sieved flour, mix until combined, lastly add 1 tsp Oren flavour and set aside.
Preheat oven to 150°C for 30 minutes (you may add a tray of water in the oven to increase the humidity, which can help preventing the cake surface from cracking).

Meringue
4 In another clean mixing bowl, whisk egg whites until soft peak.
5 Add in sugar gradually, continue whisking until stiff peak
6 Add 1/3 part of meringue to batter, mix gently using spatula finally add in mixed fruit .
7 Pour batter into an 7″ loaf shape lined cake pan
8 Swirl the batter using icing spatula to create a marble effect, then drop the baking pan on table for 3-4 times to burst large air bubbles.
9 Bake at 150°C temp for 40 minutes( upper and lower) then increase to 180°C/355°F and continue baking for 20-25 minutes, or until fully baked.

(Reminder: The heat for different oven is different, the suggested time is only for reference, adjust the baking time base on your oven if necessary.)
The cake is ready when the tooth pic stick inserted in the center of the cake comes out clean.

Let the cake cools in the baking pan for 10 minutes before unmoulding.


After unmoulding, let the cake cools on wire rack for 30-35 minutes before serving.
